If it is true that the hamburger and America are linked by an indissoluble union as we are with pizza, it is equally true that it has become, precisely and perhaps even before pizza, the symbol of fast-food at a universal level. Today, however, it has also found its place in haute cuisine with respectable gourmet proposals.

The Authentic American Burger Recipe

When we talk about the hamburger recipe, we often immediately think of the sandwich we order at the pub, but in reality it has more to do with the mix of cuts of meat, strictly beef, that we are going to use to make the dough from which we get the actual burgers.

How To Make an American Burger

The American hamburger is made from one or more cuts of beef in equal parts minced or cut with a knife. The grinding must be done in this way: we cut the meat of the chosen cuts into pieces of about 2 cm and mix them well. At this point we can grind them so as to obtain a perfectly homogenized dough. So, using a round mold of about 8 we make the shape. The thickness should be approximately 2 cm. When we do this, let’s take care to put a sheet of baking paper under the mold so we avoid taking it with our hands and therefore breaking it. Once the hamburgers are made, as many as we can make with the prepared minced meat, we keep them in the fridge for at least 3 hours before cooking them on the plate or in a pan.

Which Meat to Use

Traditionally, burgers are made with beef only. Certainly today we find on the market or in fast-food menus or even in pubs or restaurants, hamburgers made with other meats, such as chicken, turkey, pork, lamb, mix of meats and in the last twenty years vegan and vegetarian hamburgers have been offered. So, if we are talking about authentic burgers, we are talking about beef, in all other cases, however, they are just as good and delicious, variations.

The Ingredients for the Dough

Let’s immediately dispel the myth of the hamburger made with breadcrumbs and egg or with who knows what other ingredients inside. The recipe for the original hamburger includes only beef from different cuts depending on the case. In the recipe we propose we recommend using a mix in equal parts of 3 classic cuts, namely the real one, the brisket and the belly pulp which are ground or cut with a knife in the gourmet versions. You can certainly use other cuts, however, trying to follow the general rule that suggests a minimum of 20-30% fat percentage.

The Seasoning

Once the burgers have been prepared, then we can think about how to season them. The recipe for the classic American hamburger, contrary to what one might imagine, does not include cheese, but simply leaves of lettuce, tomato, cucumber and onion sliced ​​and seasoned with salt, pepper and oil. It is then finished with sauces like ketchup and / or mayonnaise.
